A spring salad delight
Enjoy a summer feast with my favourite go-to summer salad combined with grilled chicken and veggie fajitas for an afternoon in the sun with friends and family.
Every year I look forward to testing all the delicious recipes that I have collected over the year and this is definitely one I keep going back to.

Spicy Corn & Avo Salad
Ingredients
(serves 6)
1 tablespoon coconut oil
6 cobs of corn with kernels removed
1/2 red onion, chopped
1/2 jalapeno, chopped
1 avocado (or more), diced
Handful of fresh coriander
Feta or goats cheese for topping
Fresh chili to your taste (or serve on the side)
Virgin olive oil and Fresh limes or lemons for the dressing
Instructions:
- Heat the coconut oil up to a medium heat and add the cut corn. Cook until the corn is lightly charred, stirring occasionally for about 10 minutes or until cooked. Set aside and let the corn come to room temperature.
- In a large serving bowl, add the corn, onion, jalapeño and avocado. Stir gently to combine. Top with some fresh coriander, feta or goats cheese and fresh chili. Drizzle with some virgin olive oil and fresh lime or lemon juice
Grilled chicken and veggies of your choice is the perfect combination and served with fajitas.
